Lentil & Spinach Soup
This vegan recipe is delicious & packed with healthy ingredients. It works just as well with kale, which you would finely slice & add 5 minutes before the end of cooking. 4 Servings Ingredients: 1 onion, finely chopped 2 carrots, finely diced 2 cloves of garlic, minced 300gr green lentils 1/2 tsp ground turmeric 1 tsp ground cumin 1 tsp ground coriander 1 tsp chilli powder 1.5 litres of water 2 vegetable stock cubes Juice of 2 lemons 2 handfuls of spinach Fresh coriander, to

Thai Sweet & Sour Chicken
There are many, many versions of sweet & sour sauces out there. From the bright red style that one may find at a Chinese buffet, to the more discreet, spicy version such as the one I am sharing here. It really is a delicious dish that packs a punch when it comes to flavour. It is best to use fresh pineapple in this dish though at certain times of the year, tropical fruits can be hard to find where I live. I don't let that hold me back! Tinned pineapple is perfectly acceptable

Mango Salad
This side dish pairs perfectly with grilled meats. I absolutely love it accompanied by grilled steak and chimichurri on the side. The sweetness of the mango clashes marvellously with the tangy lime & bitter onion, with the crunchy peanuts giving it that extra swag. I have occasionally served this salad in gem lettuce 'boats' for that extra wow effect. 2 Servings Ingredients: 1 mango, cut into small cubes 1 avocado, cut into small cubes 2 tbsp fresh coriander (leaves only), fi

Pad See Ew
This is in my top three favourite Thai meals. I could never tire of it & just love the caramelised noodles coupled with the crunchy broccoli. I always use the stem of the broccoli as well. It is delicious and adds even more texture to this stir fry. I love to serve this dish with my pickled chillies, which is fresh chillies that have pickled with white vinegar in a jar in my fridge for roughly a week. A bit of the vinegar drizzled on these delicious noodles really is divine!

Chicken Penang Curry
We have another dish that confuses us with its origins! Named after the Malaysian island of Penang, this dish is well known across central & southern Thailand. I'm a real fan of making life easier by using quality, ready made curry paste, though there are certain Thai curries for which I highly recommend you make the paste fresh, such as my Chiang Mai Thai Curry recipe, which would simply not be the same without the bold flavours that can only be found with fresh ingredients.

Lady Hatawa's Soul Broth
There are certain recipes that are dearer to my heart than others & this is one of them. I have always loved noodles, particularly rice noodles in soup. I find eating noodles feels like a warm hug; there is something so comforting about it. This dish is heavily influenced by my childhood in south east Asia & my love for Thai food in particular. It can be easily converted into a vegan recipe by simply leaving out the chicken & swapping the chicken stock for vegetable stock. Ma

Balti Chicken Roast
Anyone who has lived in the UK would know just how much the Brits love Indian food. There are Indian restaurants & take-away businesses all over the place! I myself am partial to a lovey Bhuna curry with warm garlic naan bread on the side... heaven! But the UK is also famous for its Sunday roasts, which is why I want to combine the two by cooking a roast chicken 'Indian style' with a lightly flavoured curry gravy. I served it with Lebanese flatbreads (because, sadly, naan bre

Tom Kha Gai
Ah! My favourite soup on planet earth. I cannot get enough of it! This Thai coconut chicken soup is bursting with flavour & incorporates the sour, sweet, salty & spicy notes that are so typical of Thai food. At times, I cannot find fresh lemongrass but my local Asian store sells finely shredded frozen lemongrass which works just as well. Simply add 2 tbsp, which of course, is perfectly edible when shredded so finely. However, it is important to note that if using fresh lemong

Pad Kee Mao
Also known as 'drunken noodles', this Thai dish was given this name as it is a rather spicy dish that is often eaten at the end of boozy nights out. It has a real kick to it and is perfect accompanied by a chilli sauce called Sambal Oelek, which you may be able to find at your local Asian store. 4 Servings Ingredients: 4 tbsp sugar 2 tbsp water 3 tbsp soy sauce 1 tbsp dark soy sauce 6 tbsp oyster sauce 2 tbsp peanut oil or sunflower oil 400gr rice noodles 5 cloves of garlic,

Chard & Broccoli Stalk Stir-Fry
It makes me wince when people chop off the stalks or base of a broccoli and discard it. I absolutely love this part of broccoli. Simply remove the rough outside layer and you will find smooth, much softer flesh inside that is tasty and perfect for stir-fries. This recipe is easy to make & packed with goodness. It is great as a side dish with teriyaki salmon (you can search for this recipe in the search box above). You can even add noodles & chicken for a 1 wok meal. Simply b

Chinese Pork Fakeaway
I do love a takeaway, though, living in the French countryside, we have few options available and even less that will deliver. Being a lover of Asian food, I like to recreate some of my favourite takeaway dishes at home, this one being a winner all around and thoroughly enjoyed by my family. I have used re-hydrated Chinese mushroom & jarred baby corn in this version though you can pretty much add what you like, such as carrot ribbons, tinned bamboo shoots or soy bean sprouts.
