This wonderful dish is from Cuba has a name that translates as 'old clothes' or 'old tops' due to the appearance of the shredded beef which I suppose with some imagination may resemble a pile of laundry. It really is a delicious meal which I served with a side of rice & a simple avocado & red onion salad.

4 Servings
Ingredients:
750gr beef, cut into large cubes
4 tbsp olive oil
1 onion, finely chopped
1 green pepper, sliced
200gr pimentos (or 1 red pepper), sliced
4 cloves of garlic, minced
350ml tomato passata
150ml dry white wine
1 tsp cumin
1 tsp oregano
1 bay leaf

Instructions:
Place beef in a pot & cover with water. Add a teaspoon of salt & bring to a boil before reducing the heat to low & allowing to simmer for 2-2.5 hours. The meat must be very tender in order to be shredded.
Drain & shred the beef using 2 forks.
Heat the olive oil in a pot on medium low heat & cook the green pepper, pimentos & onion for 5 minutes, stirring regularly.
Add the garlic, tomato passata, white wine, cumin, oregano & bar leaf.
Season with salt & pepper & allow to simmer, covered, for 20 minutes, stirring regularly.
Add the beef & simmer on low heat another 10 minutes.
