Breakfast Loaf

This healthy bread is a great breakfast option for adults & children alike. It can be eaten as it is or with a thin layer of jam.

1 Loaf
Ingredients:
2 eggs
50gr sugar
3 ripe bananas (the riper, the better!)
130gr Greek yogurt
210gr flour
1 tsp baking powder
2 tbsp chocolate chips
50gr raw oats
Instructions:
Heat oven to 180c for fan assisted ovens & 200c for traditional ovens.
In a large bowl, beat the eggs & sugar together for 2 minutes.
Peel the bananas & mash with a fork.
Add the mashed bananas & yogurt to the large bowl with the sugar & egg mix & whisk gently to combine.
Add the baking powder & the flour, little by little, whisking well to avoid lumps.
You should have a smooth batter at this point.
Add the chocolate chips & oats, stirring gently to combine.
Pour the batter into a bread baking tray that has been greased with butter.
Bake for 40-45 minutes. To ensure the bread is baked through, poke a knife deep into the centre of the loaf & pull it out. If there is batter stuck to the knife you should return the loaf the oven for 5 further minutes at a time, until the knife comes out dry & relatively clean.
