Ratatouille

What a rustic dish this French Provencal vegetable stew is. Please do not ever consider the version made in the animated film, Ratatouille, which resembles a cross between a lasagna and a tian. This countryside recipe is a chunky vegetable stew, that can be served as a side to many meals but is beautiful accompanied by a grilled steak.

Ingredients:

1 large onion, roughly chopped

1 aubergine, roughly chopped into chunky cubes

1 yellow pepper, roughly chopped

4 tomatoes, blanched & peeled, then roughly chopped

1 bay leaf

1 sprig of thyme

2 cloves of garlic, roughly chopped

S&P

1 courgette, roughly chopped into chunky cubes


Instructions:

Drizzle olive oil into a pot and heat on medium heat.

Add the onion & aubergine. Cook for 5 minutes, stirring regularly.

Add the yellow pepper, tomatoes, bay leaf, thyme, garlic, S&P.

Simmer 10 minutes, stirring regularly.

Add the courgette & simmer another 20 minutes, stirring regularly.
