Nutty Brazilian Chicken

Brazilian food is very interesting to me. It is like a blend between Creole & Asian food but with its own twist. I love that they often use various nuts in their cooking. It really does add a unique flavour to their food.


4 Servings


Ingredients:

750gr chicken breasts, diced into bite sized pieces

Juice of 1 lime

1 onion, finely chopped

1 clove of garlic, finely chopped

40gr ginger, finely grated

1 tsp cumin

1 tsp turmeric

1 tsp ground coriander

1 tsp cayenne pepper

50gr peanuts, coarsely blended

50gr cashew nuts, coarsely blended

1 tbsp tomato paste

2 tomatoes, diced

20cl coconut milk

Olive oil

S&P

Fresh coriander or parsley, to serve.

Lime wedges, to serve


Instructions:

Combine the chicken, lime juice & 2 tbsp of olive oil in a bowl with a sprinkle of salt & pepper. Allow the chicken to marinate while you prepare the rest of your ingredients.

Heat a drizzle of oil in a wok or deep pan & add the onion. Simmer on medium low heat for 3 minutes, until soft & golden.

Add the garlic & ginger. Stir well before adding the cumin, turmeric, coriander & pepper.

Stir constantly as you fry off the spices for 1 minute.

Add the chicken & allow to brown on all sides.

Add the tomato paste & fry 1 minute before adding the tomatoes, peanuts, cashew nuts & 25cl of water.

Bring to a simmer & cook for 10 minutes.

Add the coconut milk & simmer, uncovered, a further 10-15 minutes or until the chicken is cooked through.

Serve with rice, a sprinkle of fresh coriander or parsley & a wedge of lime.
