Caramelized Pork Tacos with Pineapple Salsa

I love tacos in many forms. This is an original way to make them that is quick, healthy & bursting with tangy, sweet flavours. Serve with warm tortillas & a spicy mayonnaise sauce. Enjoy!


4 Servings


Ingredients for the Caramelized Pork:

Olive oil, for frying

2 cloves of garlic, minced

800gr boneless, fatless pork, finely sliced

2 tsp fish sauce (can be substituted by soy sauce)

4 tbsp sugar


Ingredients for the Pineapple Salsa:

200gr fresh pineapple, peeled & cut into very small cubes

100gr cucumber, peeled & cut into very small cubes

100gr avocado, peeled, pit removed & cut into very small cubes

1 shallot, finely chopped

10gr fresh coriander, finely chopped (can be substituted with parsley)

Juice of 1/2 lime

A sprinkle of salt


Spicy Mayonnaise Sauce:

4 tbsp mayonnaise

A drizzle of peri peri or sriracha sauce (to your liking)

Juice of 1/2 lime


To Serve:

8 tortillas

Pickled jalapenos


Instructions:

In a medium sized bowl, combine all ingredients for the salsa. Mix gently & set aside in the fridge.

In a small bowl, combine all ingredients for spicy mayonnaise sauce. Whisk gently & set aside in the fridge.

Heat a drizzle of olive oil in a pan over medium heat.

Add the garlic & fry for 30 seconds, stirring constantly.

Add the pork & fish sauce.

Stir fry for 3-5 minutes or until the meat is nearly cooked.

You may a little juice from the meat in the pan. If there is roughly 2 tbsp you can continue to add the sugar. If the pan is pretty dry, add 2 tbsp of water before adding the sugar.

Raise the heat to high & stir to mix in the sugar. Then, allow the sauce to bubble for 30 seconds, without stirring, to create the caramelisation.

Continue to stir gently & pause for 30 seconds, until you have achieved a golden brown caramelisation.

Serve with warm tortillas, the salsa, the spicy sauce & pickle jalapenos.
