Lohikeitto (Finnish Salmon Soup)

When I discovered this incredible dish from Finland, I fell in love with it instantly. I love fish, particularly salmon, though I had never thought to use it in a soup. Not only is this dish incredibly healthy, it is very easy & quick to make. The fresh dill really is the star of the show & adds that Nordic flavour that makes this soup one of a kind. This soup is even better the next day, when the dill has had more time to infuse the broth.


4 Servings


Ingredients:

2 tbsp butter

1 large leek (the white part), finely chopped

1 carrot, finely sliced

500gr potatoes, peeled & cut into bite sized cubes (roughly 2cm x 2cm)

1 litre fish stock (can be substituted with vegetable stock)

200ml liquid cream

500gr salmon, deboned, skinned & cut into cubes (roughly 3cm x 3cm)

20gr fresh dill, finely chopped

Instructions:

In a large pot, melt the butter over low heat.

Add the leek & cook on low heat for 5 minutes, until softened.

Add the carrot, potatoes & stock.

Bring to a simmer & cook, still on low heat, for 12-15 minutes or until the potatoes are cooked through but still firm.

Pour in the cream & bring the soup back to a gentle simmer.

Add the salmon & allow to cook for 3 minutes without stirring.

The salmon should be just cooked but still holding its shape.

Turn off the stove, add the dill & stir gently.

Cover with a lid & allow to rest for 5 minutes before serving with rustic, buttered bread.
