Valhalla Breakfast

There is nothing I love more than the smell and taste of fresh dill. And what better combination than the Scandinavian holy trinity... dill, salmon & lemon. This is a quick, easy breakfast that will delight your taste buds & leave you wanting more!


2 Servings


Ingredients:

100gr smoked salmon, roughly chopped

Juice of 1/2 lemon

Cracked pepper

2 tbsp fresh dill, stalks removed & finely chopped

1 tbsp mayonnaise

4 eggs

3 tbsp butter

Rustic bread, cut into 1.5cm - 2cm slices (1 large or 2 small slices each)

Instructions:

In a small bowl, gently mix the salmon with the lemon juice, a generous sprinkle of cracked pepper & 1 tbsp of the fresh dill.

Melt 1 tbsp butter in a pan & add the sliced bread. Fry on medium heat until the bottom side is golden. Melt another tbsp of butter in the pan & flip the bread to fry the other side. Once golden, place on the plates.

Melt the 3rd tbsp of butter in the pan. Beat the eggs with a pinch of salt & add to the pan. Drop the heat to medium low & gently stir the eggs until scrambled & cooked through.

Place a layer of scrambled eggs on the toasted bread.

Add a layer of the salmon mix over the eggs.

Sprinkle the remaining fresh dill over the top & serve with a wedge of lemon.
