Brodu Tat-Tigiega

This Maltese chicken stew is most well known on this stunning island for its medicinal properties. One of my brothers has lived on Malta for many years & swears it cured him from the worst flu he had ever had. As you will read, this is goodness in a bowl & at the very least an incredibly healthy meal.

Ingredients:

1kg chicken thighs

2 carrots, peeled & sliced

4 stalks of celery, the stems finely chopped & the leafy ends left as they are

1 onion, sliced vertically

3 cloves of garlic, finely chopped

1 tbsp tomato paste

1 chicken stock cube

S&P

1 large potato cut into large cubes

A handful of rice or small pasta

Fresh parsley, finely chopped


Instructions:

Place chicken in a large, deep pot. Add carrots, celery stems & leaves, onion, garlic & tomato paste.

Cover with water. Add the stock cube, S&P.

Bring to boil.

Cover & simmer for 30 minutes on low heat.

Add potato & simmer, covered, a further 30 minutes.

Add rice or small pasta & simmer until cooked.

Serve with a generous pinch of parsley.
