Boeuf Carottes

This classic French beef & carrot stew is a true representation of the rustic simplicity that embodies countryside cooking here in France.



4-6 Servings


Ingredients:

1kg stewing beef

1 onion, roughly chopped

15cl white wine

60cl beef stock

2 cloves of garlic, finely chopped

1 bouquet garni (2 bay leaves, 2 sprigs of thyme & parsley stalks tied together with cooking string)

S&P

1kg carrots, sliced


Instructions:

Brown beef with a little olive oil & melted butter.

Add onion & fry on medium heat 3 minutes.

Add wine & simmer 2 minutes.

Add beef stock, garlic, the bouquet garni, S&P.

Cover & simmer on low for 2 hours.

Remove bouquet garni & add in the carrots.

Simmer on low heat another hour until carrots are soft & buttery.

Serve with freshly baked rustic bread.
