Warm Sausage Salad

I do love making this dish in autumn & spring, when its not quite cold enough for stews but certainly not warm enough for cold salads! I use Montbelliard Sausages but you can substitute with another smoked sausage.



2 Servings


Ingredients:

2 Montbelliard or other cooked smoked sausages

4 eggs

6 small potatoes

200gr bacon lardons

2 shallots, finely chopped

1 tbsp wholegrain mustard

2 tbsp apple cider vinegar

4 tbsp olive oil

1 red onion, finely sliced into rings

Parsley, finely chopped


Instructions:

Boil the sausages for 15 minutes to warm them through.

Boil 4 eggs for 10 minutes until hard-boiled.

Boil potatoes until cooked but still firm.

Fry lardons & shallots until cooked & place on a paper towel to drain grease.

Combine mustard, vinegar & olive oil to create a vinaigrette.

Assemble salad by placing ingredients as follows on each plate: warm sliced potatoes, lardons & shallots, warm slices of sausage, eggs cut into halves, sliced red onion, parsley & a drizzle of vinaigrette.
