Spicy Courgette Spaghetti

This beautiful, flavoursome pasta dish can be adapted for vegans by simply removing the parmesan or replacing it with a vegan cheese. It is incredibly quick to make and a delight for the taste buds!

2 Servings
Ingredients:
6-8 tbsp olive oil
200gr spaghetti
20 cherry tomatoes
1 large green chilli, finely chopped
4 cloves of garlic, minced
S&P
1 courgette, sliced into thin ribbons
Parmesan
Instructions:
Prepare all your ingredients in advance while you boil a pot of water, with a generous pinch of salt.
Once the water is boiling, add the spaghetti and while it is cooking, heat the olive oil in a pan on medium heat.
Add the cherry tomatoes, whole, and toss 1 minute before adding the chilli, garlic & seasoning.
Allow to simmer another 30 seconds then add in the courgette ribbons and cook for 5 minutes, stirring regularly.
Add in the spaghetti & a drizzle of pasta water.
Toss well and serve immediately with a generous helping of parmesan.
