Speedy Cheesy Pork

This recipe can be prepared in 20 minutes, making it an ideal choice for a weeknight meal, & one that all ages will enjoy. Simply remove the chilli powder if you are cooking for children. You can also prepare the pork in tomato sauce in advance, allow to cool and place in an oven dish with the mozzarella layered on top, ready for baking 20-30 minutes at 180c when needed. This dish is best served with pasta.

4 Servings
Ingredients:
2 tbsp olive oil
700gr boneless pork chops, fat removed & cut into thin strips
1 onion, finely chopped
2 cloves of garlic, finely chopped
800gr tin of whole tomatoes, crushed by hand
1 tbsp balsamic vinegar
1 tbsp dried oregano
1 tsp white pepper
1 tsp salt
1 tsp chilli powder
20gr fresh basil, leaves only, torn
250gr drained mozzarella, sliced
Instructions:
Heat 2 tbsp olive oil in a deep pan. Add the pork & fry on medium heat for 3 minutes, stirring regularly. Add the onion & garlic. Fry another 2 minutes before adding the crushed tomatoes, vinegar, oregano, pepper, salt & chilli powder.
Bring to a simmer on medium low heat. Cover with a lid & allow to simmer for 5 minutes.
Add the fresh basil & stir well for 1 minute.
Layer the mozzarella over the top, reduce to low heat & cover with a lid. Simmer for 5 minutes or until the mozzarella is melted.
