Salade Nicoise

This delightful salad is originally from Nice, in the south of France. I have heard of several different versions of this salad, including one that contained rice, but this is the most authentic recipe I know. Having lived a year in neighbouring Cannes, I did have the opportunity to eat this salad on many occasions & I hope you love it as much as I do.

Ingredients:

8 leaves of lettuce

2 potatoes, cut into bite-sized cubes, boiled & cooled

2 handfuls of green beans, boiled & cooled

1 tin of tuna

2 tomatoes

A handful of black olives

2 hard boiled eggs

Anchovies


Instructions:

Layer your ingredients in the order given above.

Drizzle French Vinaigrette over the top and enjoy.
