Pesto Pasta Salad

This delicious Italian salad is meant to be serve at room temperature, and is the perfect meal for a hot summer's day or as an accompaniment to a barbecue.

4 Servings
Ingredients:
100gr sundried tomatoes
1 clove of garlic
15gr ground almonds
15gr parmesan
5 tbsp olive oil
1/2 courgette, finely diced
400gr pasta shells (fusilli, for example), cooked & cooled
A handful of olives, sliced
A ball of mozzarella
Instructions:
Place sundried tomatoes, garlic, ground almonds, parmesan & olive oil in a blender.
Blend until you obtain a smooth paste.
Fry courgette with a drizzle of olive oil until cooked.
In a bowl, combined the pasta & pesto. Mix well then add the courgette & olives.
Toss it all together & top with cubes of mozzarella.
