Omelette Wrap

This is one of my favorite breakfasts, since I'm not a fan of cereals or other sweet breakfasts. I prefer to start my day with something that has a kick. This recipe was inspired by Greek cuisine with the freshness of the yogurt sauce clashing perfectly with the chilli sauce.

2 Servings
Ingredients:
2 tortilla wraps
2 tbsp coriander leaves
2 tbsp parsley leaves
1 clove of garlic
250gr Greek yogurt
Juice of 1/2 lemon
S&P
4 eggs
1 tomato, sliced
1 1/2 red onion, finely sliced
6 slices of cucumber
Sriracha chilli sauce
Instructions:
Place parsley, coriander & garlic in a mixer & finely chop.
Combine with the yogurt, lemon juice, S&P.
Whisk the eggs with a little S&P & cook as omelettes.
Place a wrap on each plate, add a dollop of yogurt sauce, 1/2 the omelette, tomatoes, red onion, cucumber & a drizzle of sriracha sauce.
