Olivier Salad

This salad is originally from Russia, named after its creator, Lucien Olivier. I believe the original salad contains peas rather than cucumber though i prefer the crunch that cucumber adds to it. At times the cubes of ham are replaced with diced, cooked chicken as well. Over all it is a hearty, tasty salad that is sure to be a crowd pleaser!

Ingredients:

6 medium sized potatoes, peeled

1 carrot, peeled

3 eggs, hard boiled & roughly chopped

100gr cubed ham

5 large gherkins, diced

1/2 cucumber, peeled & diced

5 tbsp mayonnaise

1 tbsp Worcestershire sauce


Instructions:

Place potatoes in a pot & cover with water.

Bring to a boil & simmer on medium heat 10 minutes before adding the whole carrot.

Boil another 15-20 minutes until potatoes are carrot are cooked through but still firm.

Drain contents of the pot & place in a bowl with icy water to stop the cooking process & cool the carrot & potatoes.

Drain thoroughly before dicing & placing in a large bowl.

Add the eggs, ham, gherkins, cucumber, mayonnaise & Worcestershire sauce.

Toss gently to combine all ingredients & refrigerate at least 2 hours before serving.
