Mirabelle Plum Jam

This recipe can be made with any type of plum though mirabelle plums are very famous in France due to their sweet flavour. For this reason they are mostly used to make jam and desserts. I prefer to make jam the traditional way, full of chunks of fruit, though you can blend it to create a smooth jam.

4 jars
Ingredients:
1.8kg mirabelle plums, halved & pitted
600gr sugar
Juice of 1 lemon
1/2 tsp cinnamon
Instructions:
Combine all ingredients in a large pot.
Bring to a simmer and cook on low for 2 hours, stirring regularly.
Scoop into sterilised jars immediately.
Seal the jars & pop them upside down until they are at room temperature.
Once opened, refrigerate.
Enjoy on buttered toast or brioche!
