Mediterranean Fish Stew with Spicy Aioli

This incredible dish sums up the delights of Mediterranean food. Bursting with goodness & flavour, it is light enough to be served up all year round and will no doubt become one of your favourite meals.

Ingredients for the Aioli:

5 tbsp mayonnaise

2 cloves of garlic, minced

1 tsp chilli powder

A pinch of pepper

Juice of 1/2 lemon


Ingredients for the Fish Stew:

1 onion, finely chopped

1 green pepper, diced

2 cloves of garlic, finely chopped

A pinch of salt

400ml tinned chopped tomatoes

200ml water

1 tsp paprika

1/2 tsp pepper

1 tsp fresh oregano

1 tsp chilli powder

1 vegetable stock cube

A handful of olives, sliced

2 boneless fillets of Cod or other white fish


Instructions:

Combine all the ingredients for the aioli and refrigerate.

In a pan, heat a drizzle of olive oil on medium heat & add the onions, green pepper, garlic & salt.

Cook for 5 minutes, stirring regularly.

Add the tinned tomato, water, paprika, pepper, oregano & chilli powder. Crumble the stock cube with your fingers as you add it in, so that it dilutes quicker.

Simmer uncovered for 5 minutes, adding a drizzle of water if needed, to keep the consistency fluid.

Add the olives, stir & then place the fish in the sauce.

Cover & simmer 3-5 minutes or until the fish is cooked.

Serve with a drizzled of aioli over the top and a slice of rustic bread.
