Mediterranean Baked Cod

There is nothing I love more than the flavours of the Mediterranean. It is a cuisine that is always packed with healthy ingredients & deep flavours. This is a simple, quick recipe that elevates any white fish though the cooking time should be adapted depending on the thickness of the fish fillet. This dish pairs beautifully with boiled or roasted potatoes & vegetables.

2 Servings
Ingredients:
200gr boneless, skinless cod fillets
2 cloves of garlic, minced or finely chopped
50gr pit less black olives (preferably Greek olives), finely sliced
50gr sundried tomatoes, finely chopped
1 tbsp capers, drained
1 tsp dried oregano
2 tbsp olive oil
S&P
The juice of 1/2 a lemon
Instructions:
Heat your oven to 180c for fan assisted ovens & 200c for traditional ovens.
Place your cod fillets in a deep baking tray.
In a bowl, combine all other ingredients, except the lemon juice.
Mix gently & cover the cod fillets with the contents of the bowl.
Place in the oven & bake for roughly 15 minutes or until the cod fillets are just cooked through. You can check this by gently slicing into the middle & checking the colour.
It should be white throughout with no translucency.
Once done, drizzle the lemon juice over the top & serve immediately.
