Italian Inspired Aperitif Crown

Quick, easy & delicious, this recipe is perfect to impress your guests with a nibble at a party or with pre-dinner drinks.

Ingredients:

1 circular puff pastry

150gr drained sundried tomatoes

1 heaped tbsp powdered almonds

2 cloves of garlic, roughly chopped

2 leaves of basil, torn

3 slices of Parma ham, torn into smaller pieces

10 olives, sliced

3 tbsp finely grated parmesan

1 egg yolk, beaten


Instructions:

Heat the oven to 180c if fan powered, or 200c, if not.

Create your pesto by adding the tomatoes, almonds, garlic, basil & a drizzle of olive oil to a blender. Blend until the consistency of a pesto paste.

Lay out your puff pastry & press a smaller bowl in the middle to mark out a circle. Do not cut through the dough! See below for photos.

Cut lines across the circle as shown below.

Start by layering your pesto, then the Parma ham & olives. Sprinkle over the parmesan.

fold back each triangle over the ring & press down gently to attach it to the dough base.

Egg wash & place in the oven 15-20 minutes. It is done when it is puffy, golden & crisp to the touch.
