Honey & Harissa Chicken with Herby Couscous

I just love this recipe with its spicy yet sweet crispy chicken balanced out by the freshness of the couscous salad. This dish would also be a great idea for a barbecue by simply grilling the chicken rather than baking it.

4 Servings
Ingredients for Honey & Harissa Chicken:
1 kg chicken thighs
1 tbsp concentrated tomato paste
1 tbsp harissa
2 tbsp olive oil
2 tbsp honey
2 tbsp lemon juice
S&P
Ingredients for Herby Couscous:
300gr couscous, cooked
6 tbsp olive oil
3 tbsp mint, finely chopped
3 tbsp parsley, finely chopped
Juice of 1 lemon
1 tomato, finely chopped
20 olives, sliced

Instructions:
For the Honey & Harissa Chicken, place all the ingredients, except the chicken thighs, in a bowl. Mix well before coating the chicken thighs with the mix & setting aside to marinate for one hour.
Heat the oven to 200c & place the thighs on a tray that has been drizzled with olive oil.
Bake the thighs for 40-45 minutes, or until cooked through, turning them over regularly.
For the Herby Couscous, simply combine all ingredients & toss well.
