Fish Chowder

This amazing Irish fish soup is utterly delightful. This recipe contains just one fish, haddock, though you can add a variety of fish & seafood such as mussels.



4 Servings


Ingredients:

2 tbsp butter

1 large onion, finely chopped

150gr bacon lardons

1tbsp flour

600ml fish stock (I have used vegetable stock as an alternative)

300gr potatoes, cut into bite sized cubes

300ml milk

1/3 tsp nutmeg

1/3 tsp cayenne pepper

350gr haddock or other firm white fish

4 tbsp cream

Parsley


Instructions:

Melt butter at medium low heat. Add onions & lardons. Simmer 5 minutes until onions are golden then add flour & fry off another minute.

Pour in stock, stirring regularly at the start to avoid creating lumps.

Bring to a boil & add potatoes.

Cover & simmer 15 minutes or until potatoes are cooked.

Add milk, nutmeg & cayenne pepper.

Bring to a boil then add fish & cream.

Simmer 3-5 minutes until fish is cooked.

Serve with a sprinkle of parsley & rustic, buttered bread on the side.
