Farmhouse Chicken

This succulent French chicken dish, with its tangy sauce, is divine served with mash and vegetables.



4 Servings


Ingredients:

1 kg chicken thighs

S&P

4 shallots, finely chopped

8 cloves of garlic, finely chopped

250ml white wine

250ml apple cider vinegar

1 tbsp honey

1 tbsp tomato paste

250ml chicken stock

1 heaped tbsp butter


Instructions:

Sprinkle S&P on chicken, then fry in a drizzle of olive oil for 10 minutes on each side. Remove chicken from the pan and drain most of the grease, leaving just a thin layer.

Add shallots & garlic and simmer for 5 minutes, then deglaze the pan with white wine.

Add vinegar & honey.

Reduce by a third on medium low heat then add tomato paste & stock.

Bring to a simmer and return the chicken thighs to the pan.

Cook for 20-30 minutes or until chicken is cooked through.

Remove chicken thighs & place on a serving plate.

Add butter & turn heat up to high, stirring constantly for 30 seconds.

Drizzle sauce over chicken thighs.
