Courgette Gratin

It's that time of year when my vegetable garden is producing more courgettes than I know what to do with. I am always looking for ideas how to use them and this recipe is a great dish to serve for lunch with a side salad or grilled meat.

4 Servings
Ingredients:
2 courgettes, finely sliced
2 eggs
1 tbsp cornflour
250ml milk
250ml cream
3 cloves of garlic, minced
S&P
A handful of grated cheddar or emmental
Instructions:
Heat the oven to 200c.
Parboil the courgette slices for 3 minutes.
Drain well & arrange in an oven dish.
In a bowl, mix the eggs with the cornflour, milk, cream, nutmeg, garlic, S&P.
Pour the mixture over the chard & top with grated cheese.
Bake for 35-40 minutes.
