Courgette Gazpacho

This dish has become a firm favorite in my house. We serve it cold in tea cups throughout the summer and warm in mugs when the weather is cold.

6 Servings as a main course
10 Servings as a starter
Ingredients:
1 onion, roughly chopped
3 courgettes, roughly chopped
Olive oil
800ml vegetable stock
1/2 tsp black pepper
1 tsp celery salt
Juice of 1 lemon
Instructions:
Heat a drizzle of olive oil and add the onion & courgettes. Cook for 3 minutes before adding the stock, pepper & celery salt. Bring to a boil & simmer for 20 minutes on low heat. Blend until smooth then add lemon juice & mix. Enjoy warm as is or cool to room temperature & refrigerate for the gazpacho version.
