Chicken a l'Orange

This dish is an interesting yet simple recipe, easy to make on a week night but also very tasty with the tangy orange bringing a bit of flare to the chicken & potatoes.

Ingredients:

1 kg chicken thighs

1 kg baby potatoes, washed & dried

1 large orange, half sliced into thin pieces & the other half juiced

1 onion, peeled & quartered

1 head of garlic, sliced into half

1 tbsp dried tarragon

Olive oil

S&P


Instructions:

Heat oven to 180c for fan ovens or 200c for a traditional oven.

In a large oven tray, toss potatoes with roughly 6 tbsp olive oil, the orange slices, onion, garlic, tarragon, S&P.

Place chicken thighs on the oven grill & baste with olive oil then season with S&P.

Place the grill in the oven with the oven tray on the lower level directly beneath it so that the cooking juices from the chick fall directly onto the potatoes in the oven tray below.

Allow to bake for 40 minutes then remove both the chicken & potatoes from the oven & turn the heat up to 210c for fan ovens & 230c for traditional ovens.

Pour the juice of the half orange over the potatoes & toss well.

Place the chicken thighs directly on top of the potatoes, baste with the juice from the pan & bake another 15 minutes.
