Butter & Lemon Sauce

This delicious sauce is well known across France, famous for its association with fish. Both tangy & creamy, it really is the perfect sauce for grilled salmon or white fish. Once you taste it, you'll be making it again and again!

4 Servings
Ingredients:
2 tbsp butter
2 shallots, finely chopped
1 tbsp mustard
20cl liquid cream
Juice of 1 lemon
1 tbsp cornstarch
1 tsp parsley, finely chopped
1 tsp chives, finely chopped
Instructions:
Melt the butter in a small pot over low heat.
Add the shallots and simmer on low for 2-3 minutes or until the shallots soften.
Add mustard & mix well before pouring in the liquid cream.
Bring to a gentle simmer, still on low heat.
In a small bowl, mix the cornstarch with the lemon juice & add it to the pot, stirring constantly for the first minute, & then regularly for two further minutes until the sauce has thickened. Mix in the parsley & chives & enjoy!
