Beef Ragu

Its my favourite dish in the whole wide world. Nothing can make me feel better than a slow cooked 'spag bol' & this is my personal recipe that I developed over many years.



4-6 Servings


Ingredients:

3 tbsp olive oil

500gr minced beef

1 onion, finely chopped

1 tbsp tomato paste

1 stalk of celery, finely chopped

1 carrot, finely chopped

1 tbsp basil

1 tbsp oregano

A glug of red or white wine

100ml beef stock

800ml tomato sauce

S&PA handful of torn basil

1 clove of garlic, minced

Spaghetti

Grated Parmesan


Instructions:

Heat olive oil in a pot before adding minced beef.

Brown the beef before adding the onion.

Cook for a minute, then add the tomato paste & fry off another minute.

Add celery, carrot, basil, oregano, wine, beef stock, tomato sauce, S&P.

Bring to a boil & simmer on low 2-3 hours with a lid on.

Remove from stove. Add a handful of torn basil & the minced garlic, then put the lid back on & allow to rest 5 minutes.

Serve with Spaghetti & top with grated Parmesan.
