Baked Salmon with Fennel

I just love fennel! That amazing aniseed flavour goes impeccably well with fish. This healthy meal is so easy to prepare for weekdays when you have less time & energy. It is delicious accompanied my homemade sweet potato mash.

4 Servings
Ingredients:
1 large or 2 small fennels, bitter cores removed & finely chopped
Olive oil
S&P
1 tbsp capers
4 salmon fillets
1-2 lemons, sliced
Instructions:
Heat oven to 200c.
Place fennel in a bowl. Drizzle with olive oil. Season with S&P. Add the capers & toss well.
Drizzle olive oil on an oven tray & place salmon on the tray. Scatter fennel all around the fish & top each fillet with a couple of slices of lemon.
Bake for 30 minutes.
